Probably a dumb question here, but is there a difference in making a “withdrawal” and just hitting “send” and putting in the address for my non-custodial wallet? I wouldn’t think there is, but I don’t want to mess up. I didn’t see a “withdrawal” option on Coinbase, but there is a “send” feature.
Also, is it unwise to link my checking account to a non-custodial wallet to fund additional purchases? Does that reduce my anonymity in anyway?
Correct, "send" is what you're looking for. I have never used Coinbase fyi, so if you know someone who has you can check in with them. But "send" will be what you are looking for.
Just be sure to double check the wallet address and to send a test withdrawal first just to confirm you're doing everything right.

I have the electrum app installed on my mobile phone right now.
Its an android. Were you unable to find the app, or were you having a different problem?
When I searched for it in the Apple App Store, it didn’t come up, so I googled it. On their website, it didn’t show supported by iOS
I see. Guessing its just an android only app. I don't really have another recc for a mobile wallet right now, but I can dig around and see.
I imagine whatever the official wallet is for the lightning network is probably a decent choice for bitcoin, I just dont know what that is just yet
